Recipe Yields:
1 dozen medium sized popovers

One of my favorite brunch spots on the Upper West Side in New York is Popover Café. Unfortunately, they don’t make gluten-free popovers (yet). But now you can enjoy this special treat at home! These couldn’t be easier to make and are sure to impress.

  1. Put the popover pan in the oven and then preheat to 425ºF.

  2. Put all ingredients in a bowl and mix with an electric mixer until smooth.

  3. Carefully remove popover pan from the oven, grease popover pan.

  4. Pour batter into pan, filling each cup a little less than half full.

  5. Bake for 25-30 minutes depending on size of popover pan.

  6. Do not open the oven until baking is complete or popovers will not rise.
