Coconut Pineapple Cake

Recipe Yields:
One 9-inch layer cake

This was one of my grandmother’s signature cakes. I started making it as a young girl and it was always my brothers’ favorite, a must for every birthday! When I learned of my gluten intolerance, it was this cake, more than any other, that I missed. So when I developed Deya’s Gluten-Free Cake Flour, this was among the first to be tested. My brothers and I were thrilled with the results. It was just as perfect as it had always been. And my husband was introduced to a family favorite that now he requests! Enjoy-- we all know you will!
