Coconut Icing

Recipe Yields:
Icing for one 9-inch layer cake

You can't find an icing that is easier than this one. My grandmother used to swear by a boiled icing, but it is much too hard to work with, and not suitable for baking with children. This is nothing shy of perfection! The only trick with this icing is to beat if for a long time- otherwise the icing will be too thin and runny.



  1. Combine sugar and egg whites in a bowl and mix with an electric mixer for 5 minutes or until thick and easy to spread. If you do not beat the icing long enough, it will run off the cake.
  2. Ice the top of the first cake, which will become the bottom layer.
  3. Place the second cake layer on top of the pineapple.
  4. Ice the top of the cake, patting coconut into the icing as you go. Then ice the side of the cake and pat the coconut into the icing.
