These make the most delicious, crispy, chocolate chip cookies. My family has been enjoying these cookies for years. The first time I made them with Deya’s Gluten-Free Cake Flour, my Dad, a wheat-eater, devoured them. Afterwards, he said, “you’re not going to tell me that those were gluten-free?” Success! A gluten-free cookie delicious enough for everyone!
2 cups Deya’s Gluten-Free Cake Flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
3/4 cup sugar
3/4 cup firmly packed dark brown sugar
1 teaspoon water
1 teaspoon vanilla
2 cups semi-sweet chocolate chips
Preheat oven to 350ºF.
Grease cookie sheets (or use a plain silpat sheet on top of the cookie sheet).
In one bowl, mix Deya’s Gluten-Free Cake Flour, baking soda and salt.
In another bowl, cream butter, sugar and dark brown sugar. Mix until light in color and creamy.
Add water and vanilla to the butter mixture.
Add eggs to the butter mixture and mix until just combined.
Add flour mixture to the butter mixture.
Fold in the chocolate chips and mix until just combined.
Drop cookie dough onto prepared cookie sheets. Space cookies 2 inches apart as they will spread.
Bake cookies for 12 minutes.
Cool cookies on wire rack.
